Yummy Tater Salad

Recipe Title/Description:

Chef Kevin "KRobChef" Robertson's "Yummy Tater Salad" :)

Ingredients:

  • 3 lbs small to medium sized red skinned potatoes quartered or halved depending on size
  • 1/4 cup chopped red onion
  • 1/4 cup sliced celery
  • 1 chopped medium bell pepper, seeds and ribs removed
  • 1/2 cup chopped dill pickle w/ 1 tablespoon dill pickle juice OR 1/2 cup Sweet Relish
  • 1 1/4 cups mayo OR vegan mayo(I prefer the Good & Gather brand Vegan Dressing available at Target)
  • 1 tablespoon spicy brown OR dijon mustard
  • 1 teaspoon finely ground sea salt for boiling
  • 1 teaspoon finely ground sea salt for ingredient mix
  • 1/4 teaspoon ground pepper

Directions:

  1. Quarter(or halve depending on size) the red skinned potatoes. Place in large pot with enough water to cover all of the potatoes, add 1 teaspoon finely ground sea salt and bring to boil. Continue to boil until potatoes are tender when pierced with a fork, about 15 to 20 minutes for whole red potatoes, drain and set in a large bowl and refrigerate until well cooled(at least 15 to 20 minutes).
  2. Mayo based mixture: While the potatoes are cooking, mix the remaining ingredients in a large bowl and refrigerate until potatoes are well cooled.
  3. Once the potatoes are well cooled poor the potatoes into the mixed ingredients bowl and gently fold the entire mixture together until all potatoes are well covered with the mayo based mixture. Cover and chill at least 6 hours or overnight before serving. "Another beautiful day to create. Bon Appétit" :)
