Chef Kevin "KRobChef" Robertson's "Yummy Tater Salad" :)
Ingredients:
- 3 lbs small to medium sized red skinned potatoes quartered or halved depending on size
- 1/4 cup chopped red onion
- 1/4 cup sliced celery
- 1 chopped medium bell pepper, seeds and ribs removed
- 1/2 cup chopped dill pickle w/ 1 tablespoon dill pickle juice OR 1/2 cup Sweet Relish
- 1 1/4 cups mayo OR vegan mayo(I prefer the Good & Gather brand Vegan Dressing available at Target)
- 1 tablespoon spicy brown OR dijon mustard
- 1 teaspoon finely ground sea salt for boiling
- 1 teaspoon finely ground sea salt for ingredient mix
- 1/4 teaspoon ground pepper
