Juicy Awesome Meatloaf

Recipe Title/Description:

Chef Kevin "KRobChef" Robertson's "Juicy Awesome Meatloaf" or "JAM" for short :)

Meatloaf Ingredients:

  • 2 lbs Ground Beef(85%-90% lean) / Turkey(90% lean or less) This is "meatloaf" people, not "meattoast!" Fat is your friend for this recipe, but not too much or this becomes "meatsoup," lol :)
  • 1 Tablespoon Brown Sugar
  • 1 Teaspoon Garlic Salt
  • 1/4 Teaspoon Black Pepper
  • 1/2 Small White Onion (finely chopped)
  • 3/4 Cup bread crumbs
  • 1 Tablespoon Worcestershire Sauce
  • 1/2 Cup Ketchup
  • 1/4 Cup Water OR Beef Broth OR Chicken Broth
  • 2 eggs OR 2 Tablespoon Fine Powdered Flax Seed (mixed w/6 Tablespoons Water)

Topping Ingredients:

  • 2/3 Cup Ketchup
  • 1 Tablespoon Brown Sugar

Directions:

  1. Preheat oven to 350°F.
  2. In a large bowl, mix all ingredients together, EXCEPT FOR THE TOPPING, and USE YOUR HANDS WHEN MIXING :P Sure the cold meat will chill your fingers but think of all the fun you'll have squishing the ingredients between your chilly digits. MAKE SURE TO MIX WELL. NOTE: If there are egg allergy concerns substitute the 2 eggs with 2 Tablespoon Fine Powdered Flax Seed (mixed w/6 Tablespoons Water). Pack the completed mixture into a 10-inch loaf pan, make sure to shape the top of the meatloaf with a bit of an indentation down the center which helps keep the topping that will be added later from pooling along the sides.
  3. Place the loaf pan on a large sheet pan to help capture the juices that may boil over while baking and place in a preheated oven. Bake for 45 minutes at 350°F then add the topping. Bake for additional 15-20 minutes (internal temp should be at least 160°F for beef, 165°F for Turkey).
  4. Remove from oven, cover with foil and let sit for 10 minutes, then slice and serve. "JAM" goes great with garlic red skinned mashed potatoes, yummy veggies of your choice, and even your favorite kind of warm bread or toast if you don't mind carbing up. REMEMBER this is a "juicy" meatloaf recipe that is partly dependent on the fat percent of the meat you choose. More fat equals a wetter loaf, and to much fat makes "meatsoup," DOH! :) "Another beautiful day to create. Bon Appétit" :)
